Cucumber- Lime Gelatin

* 1 package (3 ounces) lime Jell-O
* 1 cup boiling water
* 1 cup low-fat, no-salt-added cottage cheese
* 1 cup fat-free plain yogurt
* 1 cucumber, peeled and coarsely grated


Directions
1.
In a large bowl, combine the Jell-O and water. Stir until the Jell-O is dissolved. Let sit for 5 minutes.

Refrigerate for 10 to 15 minutes, or until it begins to set.

Add the cottage cheese, yogurt, and cucumber. Whisk until well mixed and slightly frothy.
4.
Refrigerate for 4 hours or overnight, until firm.
Recipe Tips
You can chill this in a gelatin mold. First, lightly coat the mold with cooking spray, then wipe off the excess oil with a paper towel before adding the gelatin mixture. When the gelatin is fully set, invert it onto a plate.
